Method 1) Arrange the rocket, basil, onion, tomato and mozzarella in a bowl. 2) Drizzle the lemon juice over the avocado to prevent it from turning brown then add to the salad. 3) Whisk together the vinaigrette ingredients and drizzle over the salad. Garnish with fresh basil and serve. Suggestions 1/2 a tablespoon of balsamic vinegar in place of the lemon juice in the vinaigrette will give this salad an alternative flavour. Back
