Ingredients 500g new potatoes, scrubbed

Method 1) Boil the potatoes for 20 – 25 minutes or until soft. Drain and leave to cool but ensure they retain some warmth before chopping into bite-size pieces. Suggestions Low fat mayonnaise can be used but be careful to check the label, it can be higher in salt than regular mayonnaise.
