American-style Pancakes

 

A tasty weekend treat for the family!

Ingredients

125g plain flour
½ tsp baking powder
½ teaspoon ground cinnamon
30g rolled oats
28g low fat  spread, melted
125ml semi skimmed milk
140g low fat plain yogurt
1 large egg
Vegetable oil, for brushing the pan with
100g blackberries
4 tablespoons natural yogurt, to serve (optional)

 

 

 

Serves 3-4

1. Sift the flour, baking powder and cinnamon into a large bowl and add the oats.

2. In a separate bowl, whisk together the butter, yogurt, milk and egg.

3. Gradually combine the milk mixture with the flour using a spatula. Leave the batter to rest for 15 minutes.

4. Heat a large non-stick frying pan to a medium heat, brush with a little vegetable oil and in batches add a spoonful of the mixture allowing the pancakes to spread. Turn them over when small bubbles appear and then cook for a further 2 minutes or until cooked through.

5. Transfer to a plate and cover to keep warm.

6. Serve with yogurt and a handful of blackberries
